RECIPE: Chicken, Leek & Potato Soup for children

Delve into this mouthwatering nutrient-rich heartwarming soup. This soup brings adequate protein from the chicken and filling that veggie void.  Many children are not eating enough vegetables per day, which are oh so good for our overall wellbeing.  Soups are a great way to do this! 

 

This soup brings onion, celery, leek and garlic which pack the flavour, while the potato, also a vegetable, adds a creamy texture.  Leeks are a good source of Vitamin A, important for your eyes and your immune system. A dash of turmeric and curry powder as the cherry on top for flavour and a pretty soup colour, so the kids do not even know there are veggies inside, particularly if you puree this soup well!

Childcare Recipe: Chicken, Leek & Potato Soup

Chicken, Leek & Potato Soup Recipe

Serves 20 children


Ingredients

1.6 kg Thigh Fillet Diced, raw

25ml Olive oil

1 ½ Onion large, chopped

20 g Garlic, chopped

3 Celery stalks, thinly sliced        

3 Leeks, thinly sliced

1.2 L Chicken, liquid stock

¼ teaspoon Turmeric, ground     

9g Curry powder

1kg Potatoes, cut into 3cm pieces

1.2L Milk, full cream

Pepper, garnish 


Method  

  1. In a large saucepan, over medium heat, heat oil.

  2. Add onion and garlic, cook until softened.

  3. Add Diced Chicken and cook slightly.

  4. Then add leek and celery stalks, cook until soft.

  5. Add potato, turmeric, curry powder, stock, milk, and milk powder and bring to boil. Cook until potato is tender for approximately 30-35 minutes and reduce heat to medium-low when necessary.

  6. Transfer saucepan mixture and chicken to a blender and blend until smooth.
